HEALTH / One Pot Wonder

I think it's easier to eat healthier, if you make your own meals. You know what goes in it, and you're able to make it just like you like.

But. It can require some creativity, too.

I always find some interesting things to make. I make them, I love them, and then I completely forget about them.

Maybe not this time!

Ingredients for this super-simple vegetable curry:

  • Cauliflower

  • Carrots

  • Onion

  • Red Bell Pepper

  • Tofu (extra firm)

  • Patak's Mild Curry Simmer Sauce (looks like this:)

Throw it all together, let it do its thing (as a one-pot wonder), and you'll have a really nice, fresh meal with tons of flavor.
